Rabbit, wine, tomato and mushrooms, a pleasant combination. The surprise is how good it is! Preparation time, 30 minutes; Cooking time, 2 hours. Serves 4 to 6.
60 mL butter 1/4 cup 1 fryer rabbit, cut up 1 30 mL flour 2 tbsp 240 mL wine 1 cup 15 mL tomato paste 1 tbsp 0.5 mL ground thyme 1/8 tsp 2 medium onions, sliced 2 1 clove garlic, crushed 1 240 mL water 1 cup 3 sprigs parsley 3 salt and pepper to taste 1 bay leaf 1 8 sliced mushrooms 8
Melt butter in skillet, place rabbit pieces and brown. Blend flour, water, wine and tomato paste. Add to skillet and cook 3 minutes. Add onions, garlic, parsley, salt, pepper, bay leaf and thyme.
Simmer 1-1/2 hours until meat is tender. Add mushrooms and heat thoroughly.
